Basil-Lemon Cucumber, Tomato, Mozzarella, and Garbanzo Bean Salad


Holy hell of a long salad name, amen! I can't imagine saying the name of this Basil-Lemon Cucumber, Tomato, Mozzarella, and Garbanzo Bean Salad three times fast.

Anyone want to try?

Seriously, though, this salad is packed with all the good stuff. Cucumbers are dirt cheap right now, as are tomatoes, which makes this an easy recipe to feed a crowd. The recipe itself makes ten servings, which is perfect for a big BBQ or a summer picnic, but it can easily be halved or portioned to whatever size you want. Plus it is easy to make. SO easy! I basically cut stuff up, threw it in a bowl, poured the basil-lemon mix over it, and then tossed it in the fridge to sit and marinate for about an hour.

It's a strangely complex salad, in the best way? You get some bright acidity from the tomatoes and lemon juice, and then a cooling crunch from the cucumber, which balances it out nicely. The mozzarella adds just a touch of richness, while the garbanzo beans add some much-needed texture. And of course, what is summer without basil and lemon?

Not summer, that's what.

(On a side note: cucumber-lemon water is my drug right now. I am chugging that stuff by the gallon).

I got in the mood to make this because it is finally, finally getting warm here. And it's probably going to rain tomorrow since I just declared it to feel like summer. Colorado is sassy and likes to go against whatever weather anyone predicts. Wasn't there a Garfield comic once where the weather forecaster said that the estimation was between negative 50 and 1000 degrees? Well, that's Colorado. So I'm taking advantage of the nice weather while it lasts, and making a ton of summery food!

Hope it is just as nice where you all are (and if not, I'll send some good weather vibes your way! It's not like Colorado would listen to them anyway)

Basil-Lemon Cucumber, Tomato, Mozzarella, and Garbanzo Bean Salad
Serves 10

Ingredients:
  • 3 large cucumbers, washed and cubed (a bit larger than dicing)
  • 10 oz cherry tomatoes, halved
  • 1 (15 oz) can no salt added garbanzo beans, drained and rinsed
  • 8 ounces part skim mozzarella, diced 
  • 1/4cup fresh basil, finely chopped
  • zest of two medium lemons
  • juice of four medium lemons
  • 1/4c. olive oil
  • 1/2t crushed black pepper
  • 1/4t kosher salt
Instructions:
  1. Combine cucumbers, cherry tomatoes, garbanzo beans, and mozzarella in a large bowl. Toss to combine, and set aside.
  2. Meanwhile, in a small bowl, combine lemon juice, lemon zest, olive oil, black pepper, and salt. Whisk thoroughly for one minute. Pour lemon-basil mixture over the cucumber mixture.
  3. Refrigerate for thirty minutes to 24 hours. Serve cold. Best served within four days.

Nutty Oat and Cereal Bars

Oatmeal bars, everyone.

Chewy and soft, with a tad of crunch mixed throughout.

Nutty.

Salty.

Sweet.

With cerealllllllllll.

Six ingredients. Customizable. No bake.

Everything about these is amazing.

That's literally all I have to say.

(Did I mention cereal??)


Nutty Oat and Cereal Bars
Serves 12

Ingredients
  • 1 cup uncooked rolled oats
  • 3/4 cup chopped nuts of your choice (I used sunflower and pepita seeds)
  • 1/4cup Cheerio’s (or other cereal of your choice)
  • 1/4 cup honey
  • 1/2cup almond butter
  • 2 teaspoons vanilla extract
Instructions

  1. Preheat oven to 350F. Spread the oats onto a half-sheet pan, and place in oven for 5-7 minutes, or until golden brown. When down, place into a large bowl with the nuts and cheerio’s.
  2. Prepare an 8x8 pan with wax paper lining the bottom and sides.  
  3. Combine the honey and almond butter in a small saucepan, and heat on low until melted and thin in consistency. Turn off the heat and add the extract. Pour the mixture over the oat-nut-cereal mixture, and stir while still hot to thoroughly combine and coat.
  4. Allow to cool in the fridge for at least two hours. Cut into bars and store in an airtight container for up to a week, or in the freezer for up to a month.

Raspberry Cream Cheese Muffins

Some of us don't like pink.
I don't have anything against pink; not at all. But I have trouble really enjoying it and valuing it as a color. Does that even make sense? I think it's because I've been exposed to so much pink propaganda growing up with the hegemonic female ideal of "pink this, pink that, pink everything."  And, of course, around V-day (which I also don't have anything against, but enjoy mocking nonetheless) it always becomes an issue. Store shelves filled to the brink with pink and red! The idea that you must be consumerist if you want to show love towards those you cherish! Capitalism! Marketing!

So, yes. Around this time of the year, pink doesn't always jive well with me.

Buuuuuuuuuuuuuuut (really emphasize the length here in your mind)....

...these decadent, flavorful muffins can definitely make getting some pink into the day a lot easier!
They start out with a rich and sweet cream cheese base, which ensures a perfect texture and almost fluffy end result. Fresh raspberries are folded in at the end (they were on sale at my grocery store! yes!!), making each bite bright and flavorful. Two adjectives which clearly I need more of, because I am a huge cynic and should probably appreciate all the chocolate on the shelves more. 
Have some Raspberry Cream Cheese Muffins with a cup of tea to beat any morning blues!

Raspberry Cream Cheese Muffins
Adapted from Cooking Light
Makes 12        

  • 1/4c. light vanilla soy milk
  • 1/4tsp apple cider vinegar
  • 1/3c. reduced fat cream cheese, room temperature
  • 3tbl light margarine, room temperature
  • 3/4c. splenda OR sugar
  • 1 large egg
  • 3/4tsp vanilla
  • 1tbl canola oil
  • 1/2c. all purpose flour, plus 1tbl
  • 1/2c. whole wheat flour
  • 1/2tsp baking powder
  • 1/8tsp baking soda
  • 1/4tsp salt
  • 1c. fresh raspberries

Instructions:
  1. Preheat oven to 350°.
  2. In a small bowl, combine soy milk and cider vinegar. Let sit for at least 5 minutes. It will curdle slightly-- you are basically making dairy-free buttermilk.
  3. Meanwhile, combine cream cheese and margarine in a medium bowl. Beat with a mixer at high speed until very creamy and smooth, about 1 minute. Slowly add splenda/sugar; beat until fluffy. With the mixer still running, add vanilla, egg, and oil. Beat well.
  4. Combine flour, baking powder, baking soda, and salt. With mixer on low speed, add the flour mixture and soy milk to cream cheese mixture, beginning and ending with flour mixture (I did it in 2 batches). Mix until just moist, and then put away the mixer.
  5. In a small bowl, coat the fresh raspberries with 1tbl flour (this helps them from bleeding into the mix and from sinking to the bottom of the muffin). Using a wooden spoon or a spatula, gently fold them into the muffin batter. 
  6. Cook at 350° for 17-25 minutes, or until a toothpick inserted into the center of the muffin comes out clean. Remove from oven and allow to cool.

Open-Face Breakfast Sandwich

We're continuing with the breakfast theme, branching from 2014 to 2015! It's like Back To The Future, only with chocolate and bread instead of Lea Thompson and Michael J. Fox.

Good times.

Before the recipe, though, and speaking of good times: I completed my first 2015 5k on the third! It was really fun, but I was so nervous. I've run eight 5ks so far, and a 10k, but this was my first 5k since I got sick and developed anemia last summer. I was completely and totally expecting to have a time around 40 min, when I can usually do about 29min, because my body has just been so out of training the past few months.

Buuuuuuuut!

31 minutes and 50 seconds!

It was nice to know that I was starting out the year with health in mind! I don't believe in New Years resolutions, because I figure we should aim to change our lives at any time and for true intrinsic motivation, but I know a lot of people who have resolved to be more healthy this year. The gyms are packed, produce sales are skyrocketing, and people in general are focusing a lot more on healthy recipes.

I figure it's always best to start with breakfast, then, because it's your first meal and kind of sets the tone for the day.


Doesn't this just scream breakfast? It looks like something you would get at a cute little B&B, right? (Side note: I've never been to a B&B because when I sleep in new places I tend to get rather paranoid about someone somehow managing to hear me sleeptalk, which actually tends to make me retreat into a corner and curl up in an attempt to quiet myself-- because my sleeptalking is honestly just so so bad. I used to wake my older brother up with it all the time, and I woke myself up once. But! If I did go to a B&B or if I owned a B&B this would totally be a menu item, am I right?)

The following is something that is easily to make, fast to whip up, and a very nice way to ease into healthy eating. I used to eat breakfast sandwiches all the time before I stopped eating eggs (and now I just use scrambled tofu instead) and I loved loved loved this recipe. This is great if you are just getting into being vegetarian, or are a vegetarian who eats eggs. It's a combination of lightly toasted and nutty whole-wheat bread, fresh spinach, and a perfectly-cooked egg (runny yolk of deliciousness included!). I love adding on some tangy goat cheese, because it totally completes it.

I actually feel kind of bad even calling this a recipe, because it is so simple. Toast bread, cook egg, layer. Seriously. That's it. It's one of those obnoxiously easy breakfasts that make it hard to excuse rushing out the door without some good sustenance in your belly. But I'll basically take any excuse to cook (give me an inch, and I'll stretch it a mile), and this is something simple to fulfill that desire. It's great for new cooks, too-- be they young or old.

Open-Faced Breakfast Sandwich
Serves 1     

Ingredients:
  • 1 slice whole-wheat bread
  • Cooking Spray
  • 1 egg
  • 1/2c baby spinach
  • 3/4oz fresh goat cheese, flavored if wanted
Instructions:
  1. Toast bread. While bread is toasting, cook egg in a small pan coated with cooking spray (you can cook it any way you like, but I like over-easy). Place spinach on toasted bread, and top with egg and crumbled goat cheese. Devour!
